Pizza "Primavera" with Tomato Salad with Beemsterlite Matured
Ingredients (for 2 persons)
- 300 grams white bread mix
- 200 ml buttermilk
- Olive oil
- Salt
- Piece of BeemsterLite Matured
- 2 cloves garlic, crushed
- Black pepper, nutmeg
- 1 punnet of cherry tomatoes
- 50 grams fresh spinach, cleaned and sorted
- 1 bunch of fresh basil, stalks discarded
Preparation
Make a bread dough using the white bread mix, buttermilk, 1 tablespoon olive oil and a pinch of salt, and let it rise for 15 minutes. Grate 150 grams BeemsterLite Old, and shave 50 grams. Preheat the oven to 240°C (very hot). Divide the dough into two pieces, and roll each into a disc. Brush the pizza bases with garlic puree and olive oil, sprinkle with grated BeemsterLite Matured and season with salt, pepper and nutmeg. Place on a baking sheet, and bake the pizzas in the oven for 8-10 minutes, until golden brown. Cut some of the cherry tomatoes into quarters and some into halves. Mix these with the spinach, basil and shaved BeemsterLite Old. Take the pizza out of the oven, arrange the salad on top, and serve immediately.
