Mexican fried eggs with Beemster Vlaskaas
Ingredients (for 2 persons)
- 1 beefsteak tomato
- 2 scallions
- 1 green pepper
- 3-4 sprigs of cilantro or (flat leaf)
- parsley
- 100 g Beemster Vlaskaas
- (corn or sunflower) oil
- hot sauce (preferably made with green chillies)
- 4 eggs
- (tortilla chips)
Preparation
Score an ‘x’ on the bottom of the tomato and place into boiling water for about a minute, remove, place the tomato in cold water and peel the skin by pulling at the ‘x’. Chop the tomato into cubes, removing pulp and seeds. Slice the scallions on the diagonal, using the green and white sections. Halve the green pepper, remove the seeds and pith, and chop the flesh. Finely chop the cilantro (leaves and stems) or parsley. Roughly grate the Beemster Semi-Mature.
