Endive and Mash with BeemsterLite Matured

Ingredients (for 2 persons)
  • 500 grams floury potatoes
  • Salt
  • 1 small onion
  • 1 red pepper
  • 200 grams endive
  • 200 grams BeemsterLite Matured
  • 2 tablespoons olive oil
  • 75 ml milk
  • 50 grams fresh cream cheese
Preparation

Peel the potatoes or buy them peeled. Cook the potatoes in a little salted water, until done, in about 25 minutes. Chop the onion and pepper finely, and cut the endive into very thin strips. Cut the BeemsterLite Matured into ½ cm thick slices and cut these into strips. Heat the oil and sauté the onion. Add the pepper and stir-fry for 3 minutes. Drain the potatoes. Pour milk into the pan with the potatoes, add the cream cheese and bring the milk to the boil. Mash the potatoes, but not too finely. Spoon the endive on top of the potatoes, spoon the onion, pepper and cheese strips on top of the endive, and stir.
