Crepe cheese pie with honey-ginger syrup

Ingredients (for 4 persons)
  • 7 ounces Beemster, sliced
  • 1 cup all-purpose flour
  • 1 cup milk
  • 2 eggs
  • salt
  • 2 tablespoons melted butter or liquid margarine
  • 2 tablespoons honey
  • 2 tablespoons ginger pieces in ginger syrup
Preparation

Directions Preheat the oven to 400 °F.
Beat the flour, milk, eggs and salt into a smooth batter. Heat the butter and use the batter to make at least 8 crepes. Stack the crepes, layering with the sliced cheeses.
Place the stack on a cookie sheet or a baking dish for 10-15 minutes in the oven until the cheese is melted.
Mix the honey with the ginger (cut into smaller pieces if necessary) and the ginger syrup. Use a sharp knife to slice the cheese pie into pieces and drizzle with the honey-ginger syrup.

TIP Try adding chopped walnuts or pecans to the honey.
