Bubble and Squeak with Rocket and Beemster Vlaskaas

Ingredients (for 4 persons)
  • 1 kg floury potatoes
  • Salt
  • 350 grams small, sweet apples
  • 50 grams raisins
  • 300 ml (organic) apple juice
  • ½ vegetable stock cube, with herbs
  • 100 grams lean smoked bacon lardons
  • 35 grams butter
  • 200 grams Beemster Vlaskaas
  • Ca. 50 grams rocket salad
Preparation

Peel the potatoes, cut into pieces, and cook in plenty of salted water for 25 minutes, until done. Remove the cores of the apples, cut them into rings, and cut the rings into four. Mix with the raisins. Bring the apple juice to the boil, dissolve the stock cube in it, add the apples and raisins, and cook for 10 minutes. Fry the bacon lardons in the butter until brown and crispy. Cut the Beemster Vlaskaas into strips. Wash the rocket salad and pick out any brown leaves. Drain the potatoes, pour in the apple juice and the bacon butter and mash. Mix in the apples, raisins, fried bacon, Beemster Vlaskaas and rocket.
