Beemster salad in Belgian endive cups

Ingredients (for 10 persons)
  • 5 ounces BeemsterLite Matured
  • 1 cup red grapes
  • 1 tablespoon orange juice
  • 1-2 tablespoons walnut oil
  • 1/2 tablespoon fresh thyme
  • salt and freshly ground black pepper
  • 2 Belgian endives
Preparation

Slice the cheese into small cubes. Halve the grapes and remove the seeds. In a bowl, mix the orange juice with the walnut oil, thyme and salt and pepper to taste for the dressing and add the cheese and grapes, mixing well. Slice off the stem ends and separate the Belgian endives leaves. Place a spoonful of cheese salad in each leaf and arrange on a tray.
